The dish that disappeared the fastest was corn salad with chili Fritos.  It was so good and easy to prepare ahead of the event.

2 cans of drained corn or use thawed frozen; 1/2 cup sour cream, 1 cup cheddar cheese (or your choice) 1 cup mayo
1/2 cup chopped onion of your choice.  Mix together and at last minute before serving stir in as many Chili Fritos as you like.  Easily doubled always tasty. Add what ever you like, peas, celery, peppers...Pinterest has endless choices.
