Coconut in all its glory

French coconut pie:

Ingredients

  • 3 whole Eggs, Beaten
  • 1-½ cup Sugar
  • 1 cup Flaked Coconut
  • 1 stick Butter, Melted
  • 1 Tablespoon White Vinegar
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 1 whole 9" Uncooked Pie Shell
Seed cookies from Beth's mother in New Orleans.  Here yesterday, gone today.

Mix filling ingredients well and pour into the pie shell. Bake at 350F for 1 hour.
