Ahaaaaa. We are in Cook's Corner !

I thought we had missed Cook's Corner holiday cookie recipes, but here they are today on this icy Saturday. There are 49 others to be seen and reviewed.  They tested this cookie and said to bake it at 400.  I think that is too high.  Go for 350 for about 8-9 minutes










1/2 cup unsalted butter
1  1/2 cups packed brown sugar
2 eggs
1 tsp. vanilla
 2 1/2 cups flour, sifted
1/2 teaspoon salt
1/2 teaspoon double-acting baking powder
1 teaspoon. baking soda
1 cup sour cream
 3/4 cup nuts (I don't put in the nuts.)

Cream together butter and sugar.  Add eggs and vanilla. Beat until light and fluffy. Sift together flour salt baking powder and soda.  Add dry ingredients with sour cream, and add to butter and sugar mixture.  Mix all ingredients thoroughly. Stir in nuts if you are using them.  Chill dough for an hour.  Do not omit this step, please. Heat oven 350 and drop by tablespoonfuls onto baking sheet about 2 inches a part.  Bake 8-10 minutes watching these cake like cookies.
To make frosting: Melt 6 tablespoons butter in skillet over low heat and cook until browned. Add 3 cups confectioners' sugar , 1 teaspoon vanilla, 1/2 cup hot water.

I am in the 'making' process of luscious raisin nut filled sandwich cookies from the Mennonite Girls Can Cook blog.  Andy will be wild about them, he is a raisin guy.  I have so many dishes done for the two holiday days, Wednesday and Thursday, that I had to make a list so that we find them all. ( One Thanksgiving there were seven dishes that we missed serving.)

Then Friday Mike and his sons leave for Colorado Springs to ski and to check out a Bible college for one of his sons. We are hoping for good weather for their travels.  Nate is then going on to California for an adventure and when he comes back he leaves for Italy and will visit several countries.  Andy, Joe, Glenda and I are looking forward to a month at the beach--it is all happening at once which is the way things go. Oh, I forgot, my birthday is in there some place --I think Saturday.
