Carfagna's A Traditional Speciality Store

Carfagna's, our Italian speciality store, has wonderful meat and fish along with various products as well as local fruits and vegetables.  It's a family store, small crowded but filled with loyal fans.  Once a year they have a great big meat sale and people come from all over to fill their freezers with their fabulous selections.  I bought a lot, as usual.  One thing I like from them would be the chicken wings, so I bought several packages and today, found this recipe on Mennonite Girls Can Cook. I had a favorite recipe for wings from the old Steak and Ale restaurant but the chicken has to marinate for three days and I don't take that long with anything any more, even green bananas...you never know.


Crispy with a sticky coating....oh so good! A great backyard party food.

  • 2 pounds wings
  • 4 tbsp cornstarch
  • 1 tsp coarse salt
  • 1/2 tsp coarse pepper
  • 1/2 tsp paprika
  • 1/2 cup Franks Hot Sauce
  • 2 tbsp brown sugar
  • 1 tsp butter
  1. Wash wings and pat dry.
  2. In a ziplock bag shake together cornstarch, salt, pepper and paprika.
  3. Add wings to bag and shake well to coat.
  4. Place in a single layer in a glass pan. If not grilling right aways cover and store in refrigerator for up to several hours.
  5. Heat grill to 400ยบ. Cook wings over indirect heat for 1 hour, turning 3-4 times. (we use our Big Green Egg grill which keeps meat so moist, but you can use any BBQ)
  6. 10 minutes before wings come off grill, heat the Franks, sugar and butter in a sauce pan until the sugar is completely dissolved, and has cooked together slowly for about 10 minutes. 
  7. Remove wings from grill and place directly into sauce. Stir to coat and serve.
